Palace Kitchen is celebrity chef Tom Douglas's third restaurant featuring rustic preparations of lamb and poultry in downtown Seattle. Opened in 1996, Palace Kitchen was nominated for Best New Restaurant by the James Beard Foundation.

Tom Douglas is a chef, writer, and owner of six restaurants including Palace Kitchen. He wrote Tom's Big Dinners, I Love Crab Cakes!, and Tom Douglas' Seattle Kitchen which won Best American Cookbook by the James Beard Foundation in 2001. In an episode of Iron Chef America, Tom Douglas beat Masaharu Morimoto who is an Iron Chef in both original Japanese version and US version of the popular Iron Chev cooking show.
